Hi A.J.
The only ceiling fans I installed I used X10 to control with wall mounted
switches. The switches were 500W switches and I controlled them as an
appliance. They mmake a "click" when toggling though (downside). I would
not spend the money for IR control of fans (I have never seen these,
but imagine they would be expensive). I think you can get X10 switches
designed for "Motor Control" if you want to control fan speed. If you
have good X10 signals in your wiring I think X10 is super for non-medium
critical devices (lights, fans, etc.)
