Mark,
This probably occurs because the live CD can't be written to. Instead,
Linux writes to an "overlay" - basically a RAM disk that sits on top of
the CD. These writes will be discarded as soon as you shut down Ubuntu.
I wouldn't have expected this to extend past the CD, though, since a
thumb drive is supposed to be writable.
