You could use XCopy to copy all files younger than a specific date to a 
different directory, and then burn that directory.

Or do what I do. I have a Linux server sitting in a corner. On my 
Windows box, I have a batch file that automatically runs on startup. It 
calls rsync (part of cygwin) to automatically copy all modified files to 
the backup server. rsync is extremely fast and efficient, and even if I 
have a couple new CD images, this backup rarely takes more than five 
minutes or so. Most days, it's just seconds.
